This is a Chinese cleaver with a European style handle. It’s made with 1095 high carbon steel and is differentially hardened along the business edge. i started with a thinner billet of steel and carefully beveled it to reduce the overall weigh of the knife, resulting in a surprisingly light knife despite its large size.
