Classic Santoku made with 1095 High Carbon steel. It is weighted slightly forward of the handle, roughly 1.5’’ in front of the handle. I thoroughly tapered the stock from the spine in the primary bevel to give this kitchen instrument a light feel despite it’s robust construction.
The wood is a mystery piece of spalted material given to me by customer. She said it was sourced from a shipping box box from Asia, and that she saved the pieces for years because they were so unusual. I agree wholeheartedly, and was impressed with it’s dramatic striations as i worked with it.
The blade features an engraving of Xena: Warrior Princess.
